Sauce
- In a bowl, combine all of the ingredients. Refrigerate.
Burgers
- Preheat the grill, setting the burners to medium, about 450°F (230°C). Place a reversible grill/griddle on the barbecue grate, griddle-side up (see Chef’s tip).
- With your hands, shape the meat into 4 thick patties. Place on a plate. Lightly oil the tops of the patties. Season with salt and pepper. Set aside.
- Toast the inside of the buns on the reversible griddle. Set aside on a plate.
- Place the hamburger patties, oil-side down, on the griddle. Using a smash burger press or a large, rigid spatula, press the patties down until about 5-inches (12.5 cm) wide. Cook for 1 to 2 minutes or until nicely browned. Flip the patties over and top each one with a slice of cheese. Continue to cook for 1 minute or until the meat is cooked through.
- Spread the sauce over the inside of the toasted buns. Stack two patties on each bun bottom. Top with the tomato and lettuce. Garnish with the pickles. Close with the bun tops.
Chef’s tip
The reversible grill/griddle can be replaced here with a large cast iron skillet. In this case, cook one hamburger patty at a time.
