Bacon Potato Chip Cookies

Serves 20 cookies

Ingredients

250 ml (1 cup) Tenderflake lard
4 slices Maple Leaf® Lazy Maple natural bacon, diced, cooked until golden and drained
750 ml (3 cups) all-purpose flour
250 ml (1 cup) packed brown sugar
250 ml (1 cup) granulated sugar
2 large egg
5ml (1 tsp) vanilla extract
5ml (1 tsp) baking soda
125 ml (½ cup) crushed cooked potato chips
250 ml (1 cup) chocolate chips

Preheat the oven to 350°F (175 °C).
In a mixer or a medium bowl cream together lard, brown sugar and sugar and whisk until combined.
Add the egg and vanilla extract and whisk until combined.
Add the flour and baking soda to the bowl and mix.
Finally, add the bacon, potato chips and chocolate chips and stir in gently until evenly distributed.
Portion the cookie dough onto a sheet pan using a large cookie scoop.
Bake the cookies for 10-12 minutes, until they have flattened a bit and are golden on the edges.
Transfer to the wire rack to cool down.
