Ingredients

15 mL (1 tbsp.) canola oil

500 mL (2 cups) red onion, diced (about 3 medium onions)

175 mL (¾ cup) roasted garlic aioli sauce

15 mL (1 tbsp.) white wine vinegar

To taste, salt and pepper

1.5 L (6 cups) broccoli florets (about 2 large broccoli)

375 mL (1½ cups) grated Canadian cheddar aged two years (about 180 g or 6 oz.)

250 mL (1 cup) grated carrots (about 2 big carrots)

250 mL (1 cup) golden raisins (about 150 g or 5 oz.)

7 slices pre-cooked bacon, 50% less salt, crumbled (about 45 g or 1½ oz.)

Directions
- Heat oil in a skillet over medium-high heat. Sauté onion until tender and caramelized, about 5 minutes. Let cool.
- Combine the garlic aioli and vinegar. Season with salt and pepper to taste. Set aside.
- Combine the chilled red onions, broccoli, cheese, carrot, and raisins. Mix well and dress with reserved garlic sauce and vinegar mixture. Toss and garnish with bacon.
