Ingredients

375 mL 1 ½ cups water

250 mL 1 cup kasha (roasted buckwheat)

1 cauliflower, cut into 3 large pieces

750 mL 3 cups cherry tomatoes, halved

4 green onions, finely chopped

Juice of 1 lemon
DRESSING
-
90 mL 6 tbsp. olive oil
-
30 mL 2 tbsp. balsamic vinegar
-
10 mL 2 tsp. honey
-
To taste salt and pepper

Directions
- In a saucepan with a lid, bring water to a boil. Add kasha, wait for water to boil again, then cover and reduce heat to medium. Simmer for 5 minutes. Remove from heat and let stand for 20 minutes.
- In a food processor, blend cauliflower one piece at a time until it forms coarse breadcrumbs.
- In a bowl, mix the kasha, cauliflower, tomatoes, green onions and lemon juice.
- Combine all dressing ingredients in an airtight container.
- When ready to serve, pour dressing over salad.
