Ingredients

  1. 375 mL (1 1/2 cups) whole wheat flour
  2. 250 mL (1 cup) rolled oats
  3. 15 mL (1 tbsp.) baking powder
  4. 1 pinch salt
  5. 125 mL (1/2 cup) brown sugar
  6. 250 mL (1 cup) plain Greek yogurt
  7. 2 eggs, lightly beaten
  8. 80 mL (1/3 cup) canola oil
  9. 5 mL (1/2 tsp.) vanilla extract
  10. 20 mL (4 tsp.) clementine zest (about 6 clementines)
  11. 80 mL (1/3 cup) clementine juice (about 3 clementines)
  12. 125 mL (1/2 cup) clementine flesh, chopped (about 3 clementines)
  13. 125 mL (1/2 cup) sliced almonds

Directions

A delicious whole wheat bread that uses nearly every part of the clementine!

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, combine flour, oats, baking powder, and salt. Set aside.
  3. In another bowl, whisk together brown sugar, yogurt, eggs, oil and vanilla.
  4. Add clementine zest, juice, and flesh and combine.
  5. Add wet ingredients to dry and mix well until you have a smooth, homogenous batter. Add almonds and mix well.
  6. Pour batter into a greased 22 x 11.5 x 6.5 cm (8.5 x 4.5 x 2.5 inch) bread pan. Bake 50 to 55 minutes or until a toothpick inserted in the centre comes out clean.
