Ingredients

454 g (1 block) extra firm tofu

125 mL (½ cup) store-bought sesame dressing

1 piece of fresh ginger

125 mL (1/2 cup) plain Greek yogurt

1 Boston lettuce

1 English cucumber, cut into thin strips

250 mL (1 cup) snow peas, cut into thin strips

1 green apple, cut into thin strips

1 green onion, chopped

125 mL (1/2 cup) fresh coriander
-
1 lime, quartered

80 mL (1/3 cup) unsalted roasted peanuts, chopped

Directions
- Sponge tofu dry with paper towel. Cut into strips.
- In an airtight container, mix dressing, ginger, and strips of tofu and let marinate in the fridge for at least 2 hours or overnight.
- Drain tofu strips and set dressing aside. In a hot skillet, sear tofu for 2 minutes on each side.
- Meanwhile, prepare sauce by mixing 60 mL (¼ cup) sesame dressing and Greek yogurt.
- Place a lettuce leaf on a plate and garnish with tofu strip, cucumber, snow peas, apple, green onion, and coriander. Add sauce to taste. Drizzle with lime juice and sprinkle peanuts on top.
