Ingredients

1 yellow onion, chopped

30 mL (2 tbsp.) olive oil (total)

2 zucchini, cut into pieces

1 red pepper, cut into pieces

250 mL (1 cup) couscous

15 mL (1 tbsp.or ¼ envelope) Knorr Lipton herbs soup mix

125 mL (½ cup) pitted dates, quartered
-
250 mL (1 cup) boiling water
-
8 Les Tout-cuits du Boucher European lamb merguez sausages

12 leaves fresh mint, minced

Directions
- In a saucepan, sauté the onion in 15 mL (1 tbsp.) of oil for a few minutes. Add the zucchini and red pepper and continue cooking.
- Mix together 15 mL (1 tbsp.) of olive oil, the couscous, soup mix, and dates in a bowl.
- Pour in the boiling water, cover with plastic wrap, and set aside for 10 minutes (couscous will absorb the water).
- In the meantime, heat the sausages in the saucepan.
- Mix together the couscous, vegetables, and mint in a serving dish.
- Serve with merguez sausages.
