- On a small plate, crumble 1 gingerbread cookie. Coat the rim of a martini glass with a small drizzle of corn syrup. Dip the rim of the glass in the cookie crumbs to coat well.
- In a cocktail shaker, vigorously mix the eggnog, coffee, non-alcoholic rum, maple syrup and ice cubes. Strain into the martini glass. Garnish with whipped cream. Sprinkle with the cinnamon. Decorate with the remaining cookie.

The gingerbread cookies can be replaced with speculoos cookies or graham crackers.
