- With the rack in the middle position, preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
- On a work surface, cut the potatoes into wedges ¾ inch (2 cm) thick. Place in a large bowl of cold water. Let soak for 5 minutes. Drain and pat dry (see Chef’s tip).
- In the same bowl, combine the potatoes with the oil and steak spice. Spread out on the baking sheet.
- Bake for 45 minutes or until the potatoes are golden, turning them over halfway through cooking.
Chef’s tip
Use a clean dishcloth to dry the potatoes: an efficient and ecological option.
