Ingredients

30 mL (2 tbsp.) olive oil

450 g (1 lb.) pork stewing cubes

5 mL (1 tsp.) cumin

2 mL (1/2 tsp.) salt

450 g (1 lb.) yellow potatoes, peeled and cubed

1 onion, chopped
-
1/2 jalapeno pepper, seeded and finely chopped

500 mL (2 cups) chicken broth
-
125 mL (1/2 cup) salsa verde
-
30 mL (2 tbsp.) chopped coriander

To taste, lime wedges

Directions

In large skillet, heat oil over high heat. Season pork with cumin and salt, and brown on all sides, about 3 minutes.

Add potatoes, onion, and chili pepper. Fry for about 3 minutes.

Add chicken broth and bring to a boil, scraping the bottom of the skillet to remove browned bits. Reduce heat to medium and simmer for about 20 minutes.

Stir in salsa and cook about 35 minutes over low heat, until sauce is slightly thickened and pork is cooked through.

Stir coriander into stew and serve with lime wedges and a mix of chopped sweet red peppers and corn kernels.
