Ingredients

15 mL (1 tablespoon) olive oil

1 onion, chopped

1 clove garlic

1/2 red pepper, diced

1/2 green pepper, diced

1 jalapeno pepper, finely chopped

1 tomato, diced
-
10 new white potatoes, cooked and cut into 1/2-cm-thick slices

8 eggs

To taste, salt and pepper

Directions
- Preheat oven to 180°C (350°F).
- In a non-stick skillet, heat olive oil and sauté onion, garlic and peppers for 3 to 4 minutes.
- Add tomato and continue cooking for 2 minutes.
- Arrange half the potatoes in an 8-inch square greased ovenproof dish. Cover with sautéed vegetables and then place remaining potatoes on top.
- In a bowl, beat eggs with salt and pepper. Pour mixture over potatoes.
- Bake for 30 to 40 minutes or until the eggs are no longer liquid.
