Raspberry iced tea and lemon popsicles

Raspberry iced tea and lemon popsicles

Serves 8 to 10 popsicles

Ingredients

Popsicles

1 ½ cups (205 g) fresh raspberries
½ cup (105 g) sugar
2 lemons, zest finely grated
¼ cup (60 ml) lemon juice
2 cups (500 ml) Fuze® raspberry iced tea

½ cup (70 g) fresh raspberries
½ cup (70 g) fresh blackberries

Directions

Popsicles

In a small pot, bring all of the ingredients except for the iced tea to a boil. Simmer over medium heat for 4 minutes or until the raspberries have completely broken down.
Strain the raspberry mixture through a sieve placed over a large measuring cup with a spout, pressing on the raspberries with the back of a ladle to extract as much syrup as possible. Compost the residue. Add the iced tea to the measuring cup and mix well.

Fruit

Divide the fruit among the cavities of a popsicle mould. Fill the cavities with the iced tea mixture and insert a popsicle stick into the centre of each one.
Freeze for 6 hours or until the popsicles are firm. To unmould, run the bottom of the popsicle mould under warm water.
