Ingredients

60 mL (¼ cup) pine nuts

60 mL (¼ cup) mayonnaise

15 mL (1 tbsp.) fresh lemon juice

2 mL (½ tsp.) curry powder

15 mL (1 tbsp.) chopped fresh tarragon

To taste, salt and pepper

225 g (½ lb.) northern shrimp, coarsely chopped

1 pear, unpeeled and diced

Directions
- Put pine nuts on a plate. Microwave on HIGH for 4 or 5 minutes or until golden brown. Stir them at midway point. Set aside to cool.
- Mix mayonnaise, lemon juice, curry, and tarragon together in a large bowl. Season with salt and pepper to taste.
- Add the shrimp, diced pear, and cooled pine nuts. Stir together gently and serve in verrines, appetizer spoons, or on corn chips – it's your choice.
