Surimi rice bowl

Ingredients

  1. 500 ml (2 cups) Dainty Kimora rice
  2. 45-60 ml (3-4 tbsp) Seasoned Rice Vinegar
  3. 125 ml (½ cup) Mayonnaise
  4. 30 ml 2 tbsp Soya sauce
  5. 30 ml 2 tbsp Sriracha, as mucha s desired
  6. 200 g (8oz) Surimi, chopped (or cooked shrimp or lobster meat as desired)
  7. ½ English Cucumber, diced
  8. 1 Large Carrot, peeled and diced
  9. 1 Avovado, diced
  10. 2 Green onions, thinly sliced
  11. 2 Seaweed sheets (Nori) cut into strips (optional)
  12. Sesame seeds for garnish

Directions

  1. Cook the Dainty Kimora according to package instructions, rice cooker or stovetop. When done cooking, fold in the seasoned rice vinegar. Allow the rice to rest and cool down for 15-20 minutes.
  2. In a small bowl, stir together the mayo, soy, and sriracha. Adjust seasoning with more soy sauce or sriracha if needed.
  3. To serve, spoon some of the seasoned rice into a bowl. Place the shopped surimi, cucumber, carrot and avocado on top in quadrants. Drizzle some of the mayo mixture on top. Sprinkle with green onions and sesame seeds and tuck a couple pieces of nori in if using.
