Three-colour vegetable pasta and ham

Ingredients

  1. 30 mL (2 tbsp.) olive oil
  2. ½ small onion, minced
  3. ½ small red pepper, minced
  4. 1 clove garlic, finely chopped
  5. 125 mL (½ cup) green beans, blanched and cut horizontally
  6. 150 g (⅓ lb.) deli meat, of choice (cooked white ham or
  7. Black Forest smoked ham) cut into wide strips
  8. 500 mL (2 cups) cooked three-colour vegetable pasta, al dente
  9. 15 mL (1 tbsp.) chopped flat leaf parsley
  10. 4 fresh basil leaves, minced (optional)
  11. 10 cherry tomatoes, halved
  12. To taste, salt and freshly ground pepper

Directions

  1. Heat oil in a large skillet on high, add the onion, fry while stirring for two minutes; add the pepper and garlic, and fry two minutes more.
  2. Add the green beans, ham, and pasta, and cook another minute.
  3. Finish with the herbs and cherry tomatoes; verify the seasoning.
  4. Divide into 2 servings and put into microwave safe containers for reheating at lunchtime.

*Chef's tip: For a cold salad, refrigerate. When chilled, add 15 mL (1 tbsp.) of balsamic or any other vinegar you choose and stir well.
