Ingredients

60 mL (¼ cup) honey

1 bag mint tea

1 L (4 cups) coarsely chopped seedless watermelon

250 mL (1 cup) full-fat plain Greek yogourt

60 mL (¼ cup) fresh whole mint leaves

250 ml (1 cup) boiling water

Directions
- In large heatproof bowl or jug, combine 1 cup (250 mL) boiling water, honey, and tea bag. Steep 5 minutes. Discard tea bag. Stir mixture to dissolve honey. Set aside.
- In blender, combine watermelon, yogurt, mint leaves, and tea mixture. Process on high until smooth. Pour mixture into ice pop moulds and freeze 4 hours, or overnight, until firm
