Yakitori—Traditional Japanese Chicken Skewers

Ingredients

Sauce

  1. 125 mL (½ cup) soy sauce
  2. 125 mL (½ cup) mirin
  3. 30 mL (2 tbsp.) brown sugar

  1. 675 g 1 ½ lb. boneless, skinless chicken thighs, cut into strips
  2. 4 green onions, cut into 2.5-cm (1-in.) pieces
  3. 15 mL 1 tbsp. canola oil
  4. To taste salt and pepper

Directions

  1. In a saucepan, combine all sauce ingredients. Cook over low heat and reduce by half, about 15 minutes. Set aside.
  2. Place grill on the highest oven rack and preheat to broil. Line a baking sheet with aluminum foil.
  3. Thread the chicken strips onto skewers, alternating with pieces of green onion. Spread out on baking sheet. Brush with oil and season with salt and pepper.
  4. Bake in the oven for 5 minutes. Turn the skewers. Using a pastry brush, baste skewers with sauce. Continue cooking for 2 minutes. Baste skewers again and cook for about 1 minute or until meat is cooked and glazed. Remove from oven and baste once more.
  5. Garnish with toasted sesame seeds and a dash of lime juice. Serve with remaining sauce as a starter or a main with sticky rice and grilled bok choy.
