Jazz Up Your Holiday Leftovers So You Don’t Waste a Single Bite!

After days of indulging in turkey, tourtière, and Yule log cake, the idea of eating more of the same just to avoid waste can feel a little overwhelming... Don’t worry! You can easily turn those leftovers into something exciting and delicious. Here are a few ideas:

Turkey

The star of the evening often leaves us with way too many leftovers. When you can’t face another turkey sandwich, a mild curry will breathe new life into your poultry, offering a completely different flavor profile that will make you forget all about those holiday meals!

Mashed Potatoes

Went a little overboard with the mashed potatoes? Great news! They make a super versatile base for croquettes or patties (with tofu, tuna, legumes, etc.) or can be transformed into delicious homemade gnocchi.

Bread/Baguette

Got leftover baguette slices that no one touched? No problem! Turn them into tasty croutons to elevate your salads and soups. Just cut the bread into pieces, toss with olive oil, salt, pepper, and herbs of your choice (Provence or others). Bake for 20 minutes at 350°F and store in an airtight container for up to 7 days.

Stuffing and Stew

Stuffing makes a great filling for stuffed peppers! As for leftover stew, why not use it as a base for a reinvented shepherd’s pie? Since the stew already has veggies, you can skip the corn layer (or keep it for the purists) and finish with your leftover mashed potatoes. Guaranteed delicious!

Cranberry Sauce

If you’ve got leftover cranberry sauce, that’s fantastic! Turn it into a vinaigrette by mixing two parts oil to one part cranberry sauce, adding a splash of acidity (lemon juice, cider or wine vinegar), an emulsifier (Dijon mustard, yogurt, or mayo), and a touch of sweetness with maple syrup. Or simply add acidity and broth with some garlic to make a tasty marinade.
