To make pastry, place flour and baking powder in a food processor. Pulse several times to mix.
Add cold butter. Lightly pulse (the butter should be pea-sized).
In another bowl, combine egg, water and vinegar. Set aside.
Add egg, water and vinegar mixture to flour mixture in the food processor and pulse until a ball forms. Remove.
Cover with plastic wrap and refrigerate for 30 minutes. Divide into 4 equal balls. Set aside.
Preheat oven to 200 °C (400 °F).
In a bowl, combine all filling ingredients.
Spread two balls of dough out on a work surface and roll out until they measure 25.5 cm (10 in.) each. Place one piece of rolled-out pastry in a 20-cm (8-in.) pie plate.
Add filling. Brush edges of pastry with beaten egg. Place second piece of rolled-out pasty on top. Press edges to close, removing any excess.
Bake in the oven for 20 minutes.
Lower temperature to 180 °C (350 °F). Continue cooking for 30 to 40 minutes, or until pastry is perfectly golden.
Remove from oven. Allow to cool before cutting. Enjoy!
