- Finely dice pineapple. Refrigerate in an airtight container.
- In a large bowl, combine remaining ingredients.
- Pour oat mixture into 4 airtight containers. Let sit in refrigerator for 6 hours or overnight.
- When ready to serve, top with pineapple pieces and sprinkle with coconut, if using.

Pineapples contain an enzyme that breaks down protein. This reaction will make the oatmeal bitter if it is stored with the pineapple for more than one day. To make the oatmeal last longer, store the oat mixture and pineapple separately in the refrigerator and assemble only when ready to serve.
