- Heat olive oil in a non-stick skillet over medium heat. Season walleye fillets with cumin, salt, and pepper, and then place in skillet, skin-side down. Cook fillets about 10 minutes, basting from time to time with cooking fat, without turning them over.
- In the meantime, mix all the crushed tomatoes and mango ingredients except the olive oil and grapefruit juice together in a bowl. Season with salt and pepper and mix well.
- Just before serving, add olive oil and grapefruit juice to crushed tomatoes and mango, and then spoon mixture over fish fillets.
