Best Before… Wasted After?
Ah, those infamous expiry dates… As consumers, we often feel reassured when we see them on the food products we buy in stores. However, according to a survey conducted with IGA customers (April 2025), 43% of respondents tend to throw away a product once the indicated date has passed. But is that really the right thing to do? Let’s demystify what expiry dates actually mean.
“Best Before” vs. ''Use By”
The “best before” date refers to the period during which an unopened product, stored under appropriate conditions, will retain its freshness, taste, texture, and nutritional value. To assess the quality of the food, we rely on its smell, colour, and texture.
As for the “use by” label, it mostly applies to products whose degraded nutritional value could impact health, such as infant formula or protein preparations for liquid diets. These must absolutely be consumed before the indicated date.

High-Risk Foods
It’s important to note that some foods must absolutely be consumed before the indicated date, as they contain a high amount of water and nutrients—ideal conditions for bacterial growth.
Meat, fish, and seafood are rich in protein, which promotes bacterial growth.
Refrigerated sauces, hummus, milk, and soft cheeses have a pH level that favours the growth of Listeria.
Sprouts and microgreens pose a risk for Salmonella, E. coli, and Listeria because they are grown in warm, humid environments—so it’s important to store them at 4°C.
Finally, fresh plant-based products preserved in oil can develop botulism; while commercial products are very safe, they should still be consumed before the indicated date.
Freezing
Freezing high-risk foods that are nearing their expiry date is a great way to prevent food waste. However, it’s important to note that once thawed, the clock doesn’t reset! For example, if you freeze a product the day before its expiry date, once thawed, it should be consumed within one day. Be sure to write the freezing date on the packaging to keep track of safe storage time!
