- Preheat the oven to 350°F (175 °C).
- In a mixer or a medium bowl cream together lard, brown sugar and sugar and whisk until combined.
- Add the egg and vanilla extract and whisk until combined.
- Add the flour and baking soda to the bowl and mix.
- Finally, add the bacon, potato chips and chocolate chips and stir in gently until evenly distributed.
- Portion the cookie dough onto a sheet pan using a large cookie scoop.
- Bake the cookies for 10-12 minutes, until they have flattened a bit and are golden on the edges.
- Transfer to the wire rack to cool down.
