- Preheat oven to 180° (350°F).
- Prepare the berries: Put the berries (fresh or frozen), date powder (or date puree) and undiluted gelatin into a bowl.
- Mix thoroughly and pour into a square ovenproof baking pan.
- Prepare the crisp: Pour the package of Divine Oatmeal Cookie Mix with no added sugar into a bowl.
- Follow the instructions on the package. That is to say, add 1/3 cup of vegetable oil, 1/3 cup of plant-based beverage or milk and one egg and mix until well blended.
- Lastly, add the additional ½ cup (125 ml) of plant-based beverage or milk and stir.
- Pour over the fruit mixture and spread evenly.
- Garnish with a few berries, if desired.
- Pop into the oven for 45 minutes.
- Your house is going to smell so delicious! Allow to cool and serve. Enjoy… with no added refined sugar.
Chef’s secret:
Sweetening with date powder or date puree will take away the acidity of the berries while also adding fibre.
For a “crispier” crisp, opt for the vegan version without the egg. When you top the fruit mixture with the cookie mix, spread it out roughly using a fork.
