Bites
- With the rack in the middle position (see Chef’s tip), preheat the oven to 425°F (220°C). Line a baking sheet with a silicone mat or parchment paper.
- In a shallow dish, combine the flour with the spices. Season with pepper. In a second shallow dish, lightly beat the eggs with the oil. In a bowl, combine the cereal, panko and Parmesan.
- Dredge the halloumi cubes in the flour mixture, shaking off any excess. Dip into the egg mixture, letting some of the excess drip off. Press into the breadcrumb mixture to coat well. Dip into the egg mixture a second time, then press into the breadcrumbs a second time. Spread the halloumi cubes out on the prepared baking sheet. Freeze at this point, if desired (see Chef’s tip).
- Bake for 10 minutes or until the halloumi bites are golden and crispy, turning them over halfway through cooking.
Spicy Honey
- Meanwhile, in a glass bowl, combine all of the ingredients. Season lightly with salt. Cook in the microwave oven for 30 seconds. Mix well. Let cool.
- Serve the crispy halloumi bites with the spicy honey.
Chef’s tip
The halloumi bites can also be cooked in an air fryer. Spread the coated bites out in the basket of the air fryer and cook for 5 minutes at 350°F (180°C). Flip the bites over and continue to cook for 2 minutes or until golden and crispy. If frozen, the cooking time in the air fryer will be the same.
Once the halloumi bites are frozen, transfer them to a freezer bag. They will keep for 3 months in the freezer. You can bake them in the oven from frozen by adding 2 minutes to the cooking time.
