- In a small skillet over medium heat, lightly toast the sesame seeds while stirring often. Set aside in a bowl.
- In the same skillet, toast the coriander, fennel and cumin seeds for 3 minutes or until fragrant. Remove from the heat.
- Using a mortar and pestle or small food processor, crush the seed mixture. Pour into the bowl of sesame seeds. Add the remaining ingredients to the bowl and mix well. The spice mix will keep for 1 month in an airtight container at room temperature.
Chef’s tip
Use this za’atar spice mix to season pita bread, grilled meat or fish, roasted vegetables, salad, hummus, etc.
